2 Cups All Purpose Flour
1/4 Cup Sugar
4 Tsp Baking Powder
1/2 Tsp Kosher Salt
1/4 Tsp Baking Soda
4 Tbsp Butter, unsalted
2 Cups Whole Milk
2 Tsp Vanilla Extract
1 Large Egg
In a large glass bowl, hand whisk together flour, sugar, baking powder, salt, and baking soda. Make a well in center of dry ingredients.
In a separate smaller bowl, melt butter in microwave about 45-60secs. Remove butter from microwave and let cool 3-5mins. Add milk, vanilla, egg to bowl with slightly cooled butter and hand whisk for 30 secs.
Pour butter mixture into well of dry ingredients and fold in using a spatula to combine. Avoid over stirring (it should be lumpy). Set batter aside for 10mins.
Meanwhile, set a slightly greased griddle to medium low heat or 325 degrees F. Using a soup ladle, pour small amounts of batter on griddle, evenly separated. Cook pancakes until little bubbles start forming on top and golden color on underside. Carefully flip pancakes using a greased spatula or turner. Continue cooking until underside is golden, about 3mins longer.
Serve with softened butter, syrup, berries and/or powdered sugar.
1 Bag Frozen Ore-Ida Crispy Crowns (30oz)
1/2 Tsp Kosher Salt
1/4 Tsp Ground Black Pepper
1 Cup Mayonnaise
3 Tbsp Tabasco Hot Sauce
1/2 Tsp Fresh Garlic, grated
8oz Ham, diced
2 Tbsp Olive Oil
1/2 Cup Red Bell Pepper, diced
1/2 Cup Green Bell Pepper, diced
1/2 Cup White Onion, diced
4 Eggs
1/4 Cup Whole Milk
1 Tbsp Butter, unsalted
3 Cups Colby Jack Cheese, shredded
Sliced Scallions (greens only)
3 Slices Bacon (cooked)
Preheat oven to 425 degrees F. Prepare Crispy Crowns according to package instructions. Season with salt and pepper.
Whisk together mayo, hot sauce, and garlic. Transfer mixture to a squeeze bottle (or piping bag with small tip).
In a saute pan, cook ham in olive oil over high heat. Cook until starting to brown, about 3mins. Transfer to a paper towel lined plate. Reduce heat to medium; add bell pepper and onion to the pan. Saute until tender, about 5mins. Transfer vegetables to a bowl and add the ham. Lightly season with salt and pepper to taste.
Whisk together eggs and milk. Lightly season with salt and pepper. Heat butter in a non-stick skillet over medium heat. Add eggs and cook until slightly underdone, 3mins. Transfer to a bowl.
Using the same non-stick skillet, add half of the Crispy Crowns, squeeze 1/3 of the mayo mixture evenly over the Crispy Crowns, add half of the ham and pepper mixture, half of the eggs, crumble 1 piece of bacon and half of the cheese. Put in oven until the cheese melts, about 3-5 minutes. Repeat all steps with remaining ingredients, melt in oven. Top with last of mayo mixture, scallions, and another slice of crumbled bacon.
Jeff's way: Top with chopped serrano or jalapeno peppers.
